Peperoni Farciti Cotti
(Baked Stuffed Peppers)


6 large bell peppers
1 large onion, chopped
1 small can sliced olives, drained & chopped
1 cup shredded cheese
   (mozzarella, provolone or mixture)


¾ cup Italian bread crumbs
½ medium tomato - ripe chopped
3 tablespoons olive oil
2 tablespoons Parmesan cheese
18 teaspoon garlic powder
 
    Pre heat oven to 3500. Cut a small circle at the top of each pepper, about 1" around the outside of the stem base (leave the stem on each pepper so you can use them as caps after filling). Clean and rinse the inside of the peppers. Combine the remaining ingredients (except the olive oil) in a large bowl and mix together well. Stuff each pepper with the filling. Put the tops back in place.
    In a medium pan with at least 1½" sides, place the peppers in the pan, Add the olive oil over the top of the peppers. Place the pan in the oven and bake until tender - about 40 minutes.
