Gambero Scampi
(Shrimp Scampi)


1 lb Med Shrimp (peeled and deveined)
3 Med. Shallots (minced or 1 small onion)
5 Garlic Cloves, (minced)
8 Tbl. Butter
¼ C. White Wine (Chardonnay)
½ can Diced Tomatoes - 16 oz.


1 Lemon (juiced)
2 Tbl. Parsley (chopped)
1 lb Angel Hair Pasta(or your favorite pasta)
1 Lemon (quarted)
8 Parsley Sprigs
1 Tbl. Water
 
    Cook pasta acording to package directions (or until desired tenderness)
    In a large sauté pan, melt butter over medium heat, until it starts to bubble. Add shallots (or onion) and garlic. Cook, stirring for about 30 seconds (just until you start to smell the aromas). Add shrimp and toss with wooden spoon (coating well).
    Add tomatoes and water. Cover and simmer 2 minutes. Add shrimp and toss with wooden spoon (coating well).
    Cook about 4 minutes. Add wine and reduce for 2 to 3 minutes. Add lemon juice, salt and chopped parsley.
    Serve over cooked pasta. Garnish each plate with a lemon wedge and parsley.
